Chicken, Vegetables and Pasta Skillet
Mercy, has it really been so long since I posted anything here? I must start adding some things again.
Veg & Chicken with Pasta
1-2 cups of uncooked pasta, like elbows or rotini
olive oil
1 lb chicken, cut into bite-size cubes
1 onion, diced
2-3 cups vegetables (zucchini, broccoli, green beans, carrot slices, etc.) (more if you want)
1 cup chicken broth
Seasoning to taste
Cook pasta, drain and set aside.
Sauté chicken in oil. When chicken is nearly done, add onion. When chicken is done and onion is soft, remove from skillet. Add veg and sauté for a minute or two. Add broth. Bring to a boil, cover and cook 5-7 minutes until veg is crisp-tender. Stir in chicken mixture and noodles. Cook several minutes, until heated through, stirring frequently.
NOTES:
The original recipe called for 2 cups dried pasta. This was too much in proportion to the amount of meat and veg.
Season it vigorously! We used our usual Everglades Fish and Chicken seasoning, but any will do. I put some in the oil as it heated, on the chicken before and while sautéing, and some on the vegetables when I sautéed them.
Also, the original recipe says this is enough for four, but it was only enough for the two of us with some for my lunch today. We didn't have any side dishes with this, so that might make a difference. I would try it with a nice crusty bread, biscuits or cornbread.
I may try this as a vegetarian dish, upping the amount of veg and skipping the meat entirely. Or with rice instead of pasta.
