MIXING IT UP
Using premade mixes can be a real time saver. And if you make your own mixes, you know exactly what you have as ingredients. Baking (and other) mixes are not as widely available here in Germany as they are in the US, and some of the foods we like are pretty much unknown here, like cornbread or Rice-a-Roni. Fortunately, I have good recipes for both, and they are easy to prepare mixes for. One of the Facebook cooking groups I belong to started discussing the subject, and I was asked to provide my recipes. I was happy to type them up, as that way I have them all in one place. So here they are: CHOCOLATE CHIP MUFFINS MIX Bag 1: 1 ½ cups flour, ½ cup sugar, 3 tsp baking powder, ¼ tsp salt Bag 2: 1 cup chocolate chips (or more) Combine bags in a larger labeled bag. TO MAKE: 1 cup milk 1/3 cup melted butter 1 egg Preheat oven to 375°F/190°C. Stir dry ingredients to combine. Add liquid ingredients. Mix until combined, do not overstir. Stir in chocolate ...
