Vegetarian Chili

 This is one of my non-recipe recipes, also known as taking advantage of bell peppers being on sale and using whatever I stumble across in the pantry.


Vegetarian Chili


1 onion, diced

½ each red, green and yellow bell pepper, chopped or diced

handful baby carrots, chopped

1 can kidney beans, rinsed and drained

1 can corn kernels

1 can chopped tomatoes in sauce

1 can black-eyed peas *

½ liter/ 1 cup vegetable broth


red pepper flakes

chili powder

garlic

paprika

cayenne


Sauté onion, bell pepper and carrots. Sprinkle with red pepper flakes and chili while sautéing. 



Add corn, kidney beans, tomatoes and black-eyed peas. Add whatever amount of broth looks necessary. Season to taste. Bring to a boil, cover and simmer as long as you can. Stir every now and then. 


Check seasoning before serving.


* I used black-eyed peas because I had them. Could use other beans, too. And of course whatever vegetables you happen to have on hand.


If you want to add something non-vegetable, I would use rice or barley.


Serve with crusty bread.
