Peanut Butter Pie Cake
This is a favourite dessert from the Tale of the Whale restaurant at the Outer Banks, NC. Fortunately they are nice enough to post the recipe on their website! It is the perfect refreshment on a hot summer day.
Technically, it is a pie. However, the concept of pie is not known in Germany, as anything resembling a pie would be considered a variation of cake. Norbert always stumbled over its name, so we have come to call it pie-cake.

Peanut Butter Pie
115 g cream cheese, softened
125 g confectioner sugar
125 g creamy peanut butter
125 ml milk
400 ml whipping cream, whipped
9 inch crumb crust
To make crust: 20 cookies, and 120 butter,, melted (I like to use chocolate cookies, or Oreos)
Crush cookies into crumbs. Mix with butter, adding a bit at a time. Add enough butter that the mixture just holds together when you mix it with your hands. If needed, melt and use more butter, but not too much! Spread on the bottom and up the sides of a 9” (22-24 cm) pie or quiche dish. Or whatever you have that is the proper size and not deep.
Whip cream cheese until soft and fluffy. Beat in sugar and peanut butter. Slowly add milk, blending thoroughly into mixture. Fold whipped cream into mixture. Pour mixture into pie shell. Cover with aluminum foil and freeze until firm. Let sit 10 minutes or so after you take it out of the freezer before cutting and serving.
(While I prefer a chocolate crumb crust, we had no chocolate cookies and I used whole-grain butter cookies.
You can also sprinkle mini-chocolate chips or chopped up peanuts on the top.)
