MIXING IT UP

Using premade mixes can be a real time saver. And if you make your own mixes, you know exactly what you have as ingredients. Baking (and other) mixes are not as widely available here in Germany as they are in the US, and some of the foods we like are pretty much unknown here, like cornbread or Rice-a-Roni. Fortunately, I have good recipes for both, and they are easy to prepare mixes for.

One of the Facebook cooking groups I belong to started discussing the subject, and I was asked to provide my recipes. I was happy to type them up, as that way I have them all in one place. So here they are:



CHOCOLATE CHIP MUFFINS MIX

Bag 1: 1 ½ cups flour, ½ cup sugar, 3 tsp baking powder, ¼ tsp salt

Bag 2: 1 cup chocolate chips (or more)

Combine bags in a larger labeled bag.

TO MAKE:

1 cup milk
1/3 cup melted butter
1 egg

Preheat oven to 375°F/190°C.

Stir dry ingredients to combine. Add liquid ingredients. Mix until combined, do not overstir. Stir in chocolate chips.

Make 1 dozen muffins. (I made it today and it made 15.)

(I usually double this)

CORNBREAD MIX

Bag: 1 ¼ cup flour, ¾ cup cornmeal, ¼ cup sugar (or less), 2 tsp baking powder, ½ tsp salt

TO USE:

Pour contents of the bag into a bowl and stir well.

Combine: 1 egg, beaten; 1 cup milk, ¼ cup vegetable oil

Add to dry ingredients, stirring only until moistened.

Bake at 200°C/400°F for 20-25 minutes

Makes one 9” square pan or 10 muffins

COPYCAT RICE-A-RONI MIX

Bag 1: 2/3 cup rice, 3/3 cup small thread noodles (broken spaghetti, orzo, etc.)

Bag 2: chicken broth powder for 2 cups (omit if you use purchased liquid broth),
½ tsp seasoned salt, ½ tsp garlic powder, 1 TBS dried parsley

To Make:

2 TBS Butter
2 ¾ cups water or chicken broth

Brown rice and pasta in butter. Add seasonings and water/broth. Bring to a boil. Reduce heat to low and cover. Cook 15-20 minutes, stirring occasionally, until water is absorbed.

NOTE: I live in Germany where liquid broth is not available for purchase, so I use the powder. I also use a no-sodium powder.

PANCAKE MIX

Bag: 2 cups flour, 2 TBS sugar, 2 tsp baking powder, 1 tsp baking soda

To Make:

Stir dry ingredients in a bowl to combine. Add:

2 eggs, beaten,
2 cups buttermilk
4 TBS cooking oil

Mix only until combined. Do not over mix. Let sit 15 minutes before cooking – do not omit this step!

Cook as usual.

CAKE BROWNIE MIX

Bag 1: 1 cup sugar

Bag 2: 1 cup flour, 1 tsp baking powder, ¼ tsp baking soda, 6 TBS cocoa powder

Put both bags in a labelled larger bag.

To make:

1 cup butter
4 eggs
1 TBS vanilla

Butter and flour a 9x13 pan. Preheat oven to 175°C/350° F.

Combine butter and sugar, beat until light and fluffy. Add eggs, 1 at a time, beating well after each. Stir in vanilla.

Stir dry mix before adding. Add to butter mixture, stirring only until blended. Spread in pan. Bake for 20-25 minutes.
