ANOTHER CREOLE SAUCE
I have several good creole sauce recipes, and this one is not only the easiest but also the best. I usually make it with chicken but it would be good with shrimp too. If you increased the vegetables, I think it would be good without meat, and served over noodles.
Creole seasoning to taste
2 cloves garlic, minced
1/2 cup chopped onion
1 stalk celery, diced
1/4 cup chopped bell pepper (any color)
6 oz. chicken broth
4 oz tomato sauce
a bay leaf
2 cups chopped cooked chicken
Saute garlic, onion, celery and bell pepper until soft. Season.
Add rest of ingredients. Bring to a boil and then simmer for up to 30 minutes. Season to taste. Serve over rice, with a green salad and baguette.
