Vegetable Barley Soup
Vegetable Barley Soup
2 TBS canola oil
1 medium onion, chopped
2 celery stalks diced
2 carrots, diced
1 clove garlic, minced
1 cup pearl barley
4 cups vegetable broth
2 plum tomatoes, chopped
4 sprigs fresh thyme, chopped
2 bay leaves
salt and pepper to taste
Heat oil on high heat. Sauté onion
until transparent. Add celery, carrots and garlic. Cook until
vegetables are soft. Add barley, broth, tomatoes, thyme and bay
leaves.
Reduce heat to medium low. Simmer for
about 30 minutes or until barley is soft. Remove bay leaves. Season
with salt and pepper.
Serve with crusty bread.
