Cornbread -- not from a mix!

Cornbread

1 1/4 cups flour
3/4 cups cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup skim milk
1/4 cup vegetable oil
1 egg

Preheat oven to 400°F/200°C. Grease an 8-inch pan.

Combine dry ingredients. Stir in milk, oil and egg, mixing just until combined. Pour into prepared pan. Bake 20-25 minutes

Also makes 6 muffins, and lots of mini muffins (corn gems).

I also use this as a topping for chicken pot pie (I can't make a pie crust to save my life, and they can't be found here in Germany.) This is enough for an 9x12 pan of pot pie, as you don't want it to be thick or the cornbread won't bake through.

This can also easily be doubled for a 9x12 pan.

You can also easily make a mix out of this, by combining the dry ingredients in a zipper bag.
